FSIS Food Safety Guideline for Egg Products

Replaces: Draft FSIS Compliance Guideline for Small and Very Small Plants that Produce Ready-to-Eat (RTE) Egg Products (December 2017)

This guideline contains information to assist plants producing egg products that undergo pasteurization, heat treatment, cooling, and freezing in complying with the new regulatory requirements in the final rule “Egg Products Inspection Regulations.” It applies to egg product plants.  This guideline relates to the final rule “Egg Products Inspection Regulations,” 9 CFR 412.2 and 9 CFR parts 416, 417, 500, and 590.
